Oil and vinegar. Don't go fat-free, you need to fat to get all the benefits of the fat-soluble vitamins in the salad!

Maybe you can guess by my name, I might be biased, but I'd recommend low carbohydrate foods, with a sufficient amount of protein to both cut fat, and spare muscle.

I would be leery of a non-fat diet for gallbladder issues. A popular theory regarding the formation of gallstones in the first place is that a low fat diet can contribute to this as the bile isn't being pumped out of the gallbladder, leading to the formation of gallstones. Fat will get things moving.

With your limited time, have you checked in to HIIT? I've read something that really highly intense exercise can show benefits in a fraction of the time as regular "cardio".

Lots of people do Zero Carb. Its possible. I restrict my carbs to 20g or less per day, but not zero. Its possible though.
