I have had my calorie goal change before slightly with no change in any other stats before. I thought it was just me and a forgetful memory but maybe not. I just shrugged and moved on as I know it needs to be adjusted anyway as I burn more than predicted by any calculator.

The general recommendation from all I have read is to log your exercise into your Fitbit which will then make the appropriate adjustments with MFP. This tends to be more accurate than logging exercise into MFP first and syncing that way.

I'd say it is more likely to be coincidental more than anything else. My daughter has had significant allergies most of her life and has always been skinny and some times she is so much better than others. There are just so many things that affect allergies from year to year and season to season.
