I don't know your specifics but you have to find something that you can be comfortable doing for the long term. You will have to try different things to see what works the best for you.

Lots of "flavors" in everything, not the real thing. It's basically a chemical concoction. I know a company that chemically "makes" the "flavoring" in a lot of our favorite things. Fun stuff.

I would count everything. Everything but water has calories.

It's totally fair to ask your spouse to support you but not brining in the food. It will be a help for him too.

If you eat over your recommended calories per day you will gain weight no matter what the food. With that said processed foods have a lot of weird ingredients/chemicals and should probably be minimized.

Don't be. Do research and craft a plan on your own. Sites like this have so much to offer along with the opinion of a number of people who have gone through the same things you are. Somewhere in all that you will craft a plan that works for you.

Ditto to what she said. I have the best success with logging all my food, regardless of how good or bad the day. Own those results. At the end of the day and either learn from them or continue to build on them.

I have a few trigger foods. I can't even keep them in the house because the outcome is irrational. I go as far as staying away from those isles in the grocery store. You may want to check out OA.org. I don't know your specific situation but there is an entire section dedicated to trigger foods. I found it very helpful.

It's good and easy to make. It will keep in the fridge for up to about 5-7 days if you wanted to make a bigger batch and just have it for future recipes. I didn't really have any experience with it having any kind of effect on anything. It's a good protein source but it is higher in calories.
