I usually order steak fajitas with extra veggies, don't eat all the tortillas, and leave off the cheese (mostly) and sour cream. Also, I skip the beans and eat just a few bites of rice. The leftover meat and veg go into a breakfast scramble the next morning.

I would be lost without my Misto sprayer. Most cooking sans baking can be done with very little oil. When I do use, it's olive oil or cooking spray.

If it's less than one ounce I don't, but still figure it into my daily total. More than one ounce, yes, I will log. I haven't had more than a taste of whisky in 2 months. When I have the extra calories available, I prefer vodka or wine.

Both of them work in fast food restaurants, and the daughter is also a full time college student. I cook for them because I love to cook and want to give them a break on the rare days we are all off. It just gets frustrating when I'm feeling creative and no easy and health conscious agreements can be reached.

I go for the smaller cooked portion of pasta and happily fill it out with various vegetables topped with tomato sauce. Spaghetti squash, butternut, zoodles, shaved carrot strips, asparagus, sauteed spinach, even steamed broccoli are fabulous carriers of a zesty red sauce.
