If it is one that the inside lifts out it could just go in the oven, no need to dirty another dish. They are also oven proof. Sounds good!

I would suggest www.skinnytaste.com. They have some really good pumpkin recipes in there. There is a really nice loaf recipe that you would be able to cook in your toaster oven.

I am feeling the very same way. Only difference is I have a spouse but he works shift work and is not always home. I do try very hard when the weather is ok to take 30 mins of my hour lunch and walk. I try to get up early to exercise but it all depends on how many times we were up that night if I can make myself do it or…

Pureed pumpkin will also work and you don't taste the pumpkin. I use it in my chocolate cake or cupcakes.

I to have a busy schedule. I use 30 mins of my lunch and walk. I have found a buddy at work that will walk with me and that helps me stay committed to going. We have even walked in the rain with our umbrellas. Parking at the back of the parking lot and taking the stairs are also great ideas.

It can be very hard, I feed my family what I am eating and that is a bit easier. I want my girls to learn early good eating habits. Maybe they won't have the same struggles and issues that I had growing up. That is my goal and plan anyways.
