Mine is generally very similar to the one in Vegan with a Vengeance. I use whatever veggies are in my fridge, usually peppers, onions, mushrooms, sweetcorn. Get yourself a copy of Appetite for Reduction. It's awesome, lists nutritional info. The portions are pretty big and everything's under 400 cals. Plus they're all really easy to make and I haven't made anything from I didn't like yet.
