Since you are only trying to lose 21 lbs I would go ahead and set your goal to .5 LBs a week. Focus on eating lots of veggies, healthy carbs and lean proteins.

I make chicken taco meat easy and low cal. Poach 3 boneless skinless chicken breasts. Shred. dice an onion and cook in the remaining water until clear and broth is cooked down. Add meat 1 small can of tomato paste, chili powder, salt and cumin to taste, cook until all water is out.

Are you lifting weights or just doing cardio? Lifting weights will get you toned muscles under the skin and make it appear to be much less flabby. Just doing cardio does not build muscle tone.

I don't count calories on Christmas, thanksgiving or at DH's office party. I can tell you that I am pretty sure I did not eat 6,000 calories.

When I cook with ground beef (I mostly use ground venison) I put the meat in a strainer and rinse it with hot water to get the fat out of it. I then put it back in the skillet to dry it. As for the change in macros I have no idea.

As others have said stretch marks will never go away. I have heard that spray tans will cover them. I for one am proud of my stretch marks. They are tiger stripes that I earned as my babies grew inside me! As for all of the lose skin.....I plan on having that surgically removed someday.
