Sorry if i might sound a bit abrupt but stop digging yourself in a hole and use this situation as fuel! Which ever reason he had, he is gone now and being miserable over him won't help you - erase negativity and move on, you win or you learn out of each situation, the choice is yours!

what are you trying to achieve?

you won't do much with what you have but still.... dice the chicken and the onions, salted them in some oil and eventually add the stock - let it reduce to half of it and eat it. If there is enough stock in the initial part add the ice and let it cook in it.
