I was probably eating 2500 to 3000 calories with binges up to 3500-4000 cals twice weekly. Now I'm eating 1400-1500 calories, but I'm not weighing myself so I don't know if I've lost.

If it agrees with you, then go ahead and eat late at night. Eating late does not agree with me particularly well, even though I do it. I love waking up hungry for breakfast, and I don't love the feeling of last night's dinner sitting heavily on my stomach when I get up in the AM.
