I do one of three things for my salads: 1. lime juice and olive oil 2. cottage cheese 3. "fake" ranch. Mix together some greek yogurt, skim milk and one of the ranch seasoning packets. Much better for you, and tastes exactly the same.

Breakfast was refrigerator oatmeal: a combination of steel cut oats, soy milk, greek yogurt, cocoa powder, chia seeds and bananas. Made last night for an on the go meal. And my mid-morning snack was whole grain bread with natural peanut butter and flax seeds, with some strawberries on the side. Definitely recommend both!

Fry some extra firm tofu up in some lemon juice, garlic and teriyaki sauce. Super easy and delicious!

Fellow veggie! I started slowly, cutting out red meat, and then lean meats and fish. I didn't intentionally become a vegetarian though- I just one day realized I hadn't eaten meat in a month or so and decided to keep it up! I love the lifestyle.

So many ways to get protein! I have a protein shake every morning- usually soy protein powder, soy milk and a banana. Mix with Greek yogurt and garlic and use as a pita/ blue corn tortilla chip dip. Yum. It's also really good diced on top of eggs (as someone suggested), or I use it as a sandwich spread. So many things to do with it!
