You can prep the stuff that goes with the lettuce and put that in containers and then it only takes a few moments to put it together. I do cucumber carrot and tomato all in one container with a little red wine vinegar to keep if fresh (kind of pickled but not really)

As long as you stay within your calorie allotment you will lose weight. You have a good start but don't limit yourself because you think it's healthy vary what you eat and you will stick to it.

You may get more attention but I doubt anyone will jump out and grab you, but why not take a martial arts class and learn how to fight while getting leaner.

Hmm I put in your stats with a low activity level (not sure what you do) and 1,270 cal a day to lose 2lbs a weeks and 1,770 1lb a week

Because you can lose weight on a regular deficit without adding exercise. 800 calories is not a lot, and you will lose a few pounds and then fall off the wagon. Why not put your stats into MFP and eat what they recommend. It works for so many people here. It is not a quick fix but it works.

YES but consider filling foods like proteins, fruits & vegetables and not just 1300 of sweets or you will be hungry

Do not have "junk food" in the house is the best. Go to the doctor have them recommend a nutritionist. I was a fat kid and I do have a complex still today about secret eating my mother from an early age put me on every diet imaginable.
