At the pace you reported, it would not be unusual to burn about 5 calories a minute. That gets you to 600 calories for two hours. I think your formula is overestimating your burn. Even at 4 calories a minute, you're still at 480 calories for the two hour walk.

The HRM is more accurate for counting burns for a wider variety of exercises than the FitBit. However, the FitBit is much easier to keep on at all times. That bike is trying to tell you in one example that you burned 12.5 calories a minute. Ain't no way. You can work your tail off measured with an HRM and show about 7-8 calories a minute. You need to find another way to estimate your burn, I think.

No, they don't count as processed foods. Processed foods are altered. Frozen foods of the sort you're eating are not. As a matter of fact, your frozen veggies probably contain more nutrients than fresh vegetables that have sitting in a market for a couple of days.

Since beans have so much fiber, the carb count is misleading. Insoluble fiber is are not digested at all and can be subtracted from the carb count. Soluble fiber counts a little but not very much. Make you husband eat lots of veggies. Then blame him. If your veggies are a new eating behavior, over time your issue should subside. I eat lots of veggies and beans too and have my days. I just give my wife fair warning on bad days, but for the most part, it's slowed down as my tummy has gotten used to my diet.
