Hahahah! Oh me of my! Depends on what it is LZ---if I'm eating spinach or lettuce or other veggies, I'll wing it, but if it's fatty or high carbs, I'll measure. You get better at estimating after you measure for a while.

A regular vegan cheesecake uses vegan cream cheese, tofu, regular sugar, I use organic sugar but still it's regular sugar. I know when I eat raw cheesecake I am so filled that there's no way I could eat more than one piece. Even when I make my regular vegan cheesecake I could easily eat three pieces.

Tonight is my favorite "lazy dinner". I have Vermont Flatbread Vegan pizza, which is super yummy and already has the daiya cheese on it. I add green peppers and onion which are pre-chopped and in the freezer and I slice crimini mushrooms. The pizza only takes 8 minutes to cook. Soooooooo good and I only eat half and save…

I love soy or almond milk (.75 cup) with frozen banana (1 whole) and cocoa powder(2TBS). Blend until smooth. Mmmmmmmm!

As our entree we always have is a dish we called tofurkey long before "Tofurkey" came along. It is thinly sliced, marinated tofu(heavy on the olive oil-so not low-fat!) covering vegan stuffing.
