I find a small amount of freshly grated Parmesan alone on a potato can be nice or shredded chicken with cucumber, greek yogurt and a pinch of celery salt works

Both recipes look yummy. I would add some veg to the mac n cheese n bake it in the oven so the cheese goes a bit crusty
