I would start with the calories MFP has allocated. It will help you reach the goal you set. IF is not a diet.

I would suggest starting with lean gains 14 x 10. See how that works for you first and adjust after, if necessary. I started with 16 x 8 and now also do a lot of 20 x 4. It just fit my schedule better.

Calories within a certain time period you say? .. Sounds like IF - where you consume your daily calories in a specific time period and fast the remaining part of the day.

Stretching is good. A heavy backpack sounds like the culprit too. Can you be more specific about the location of the pain? You feel any pinches or is it just an overall muscle soreness? You should not have to get used to this pain. It should go away soon with out the backpack on.

The fluctuations are not due to drinking two liters of water a day, give or take. Do you weigh your self multiple times in the day? I would imagine it is due to your diet and or caloric intake.
