I had quinoa greek salad today. Cook your quinoa, add chopped cucumbers, cherry tomatoes and red onion (I added chicken breast too, but you can leave that out). Sprinkle with some crumbled goat cheese and dress with a mixture made of olive oil, red wine vinegar, oregano, lemon zest, salt and pepper. SO good!

I use a heart rate monitor. I found that originally entering it as circuit training was not giving me accurate measurements. Also, even though you do the same level (s) day to day, you're not always burning the same calories. Investing in a HRM is really the best way to go.

2 slices of sprouted grain wheat toast with 1/2 avocado spread on them topped with 2 sunny side eggs, a cup of coffee and 1/2 a grapefruit. OR blueberry baked protein oatmeal.

It's delicious roasted! My favorite things are Eggplant Parmesan, Grilled or Roasted eggplant with olive oil & salt/pepper , Eggplant "sandwiches" (breaded eggplant slices with mint and goat cheese in btwn) and stuffed eggplant. Enjoy!

Breakfast hash with spinach, onions, sweet potato and eggs sunny side up. Plus some kiwi Rice Noodles with Flank steak, edamame and red peppers in a sauce of hoisin, fish sauce, cilantro and lime juice. SO YUM!

I use it in Taco Soup. 1/2 block of cream cheese 1 jar salsa 1lb. ground meat (I usually use beef or chicken) 1 pkg taco seasoning 2 cups water Brown meat, add everything else and cook until hot. It's delicious! my husband eats his with tortilla dippers and I like a little avocado on top

they are delicious made up like a pizza. Sauce, veggies, cheese-bake until done. I also like to mix chopped mushroom with cream cheese, parsley and Parmesan and top the portabella then bake again. (I usually add some meat too, but you can easily leave it out).
