  • I beg your pardon, but fully hydrogenated oils do not contain trans fat. What THAT process does is to turn an unsaturated fat into a saturated fat.   • Are you making substitutions in your baking? Whole wheat flour can be substituted for white flour 1 to 1. For the agave (or any other syrup or honey) what you quoted sounds about right.
  • I think you may be confusing partially-hydrogenated oil with (fully) hydrogenated oil. The former contains trans fat, the latter does not. That's why peanut butter (and most other products) have it, even with a ban on the partially-hydrogenated kind taking effect next year.

  • I use it in muffins regularly. I use the granulated blend, not the kind that is blended with brown sugar. Its not terrible. I find it works better for me in things where I want a milder amount of sweetness. In very sweet things the aftertaste becomes more noticeable than I'm willing to deal with.
