I think everyone's body is different and people gain weight first in certain areas and that typically is the slowest place to loose the weight from my experience. Maybe start tracking your measurements from neck to calves and that will help you see where that weight is changing KWIM?

As far as how many calories you burn doing exercise the only way to get the closest accrue measure is to use a heart-rate monitor and set it for your build. The stuff on here is just a general idea it's not 100% on the dime.

That depends on the week. Some weeks are tight. But when I shop I am trying not to be junk and just healthy mostly fresh and raw foods and less processed junk. That always helps give me the healthiest options available. I'm just getting back on the wagon so this is new to me again :)
