You should probably be eating "mountains" of vegetables regardless of which program you follow. They satiate me and provide micronutrients we can't get anywhere else.

You've definitely gone beyond "starting" to see a change. There is already a significant loss here. Be thankful and continue on. If your loss rate starts to slow or taper off, continue on. Don't lose heart. Consistency wins the race in the long term.

I lost 66lbs in about 3 months during a weight loss challenge, here at work. Loss after this period was slower, but more sustainable. Your gender, age, and starting weight/% body fat will all factor in to your potential. Overall, slow and steady is the way to KEEP it off, along with lifestyle change.

MFP does allow you to record your measurements. You can enter it in the same screen you update your weight. In many ways, this a good way to measure. Often, people get frustrated by not seeing the scale move, but sometimes body re-composition can be tricky and you've actually dropped inches instead.

I have a vivofit, not sure how they are different, but mine seems to auto adjust my daily goal up or down based on if I met my previous goal and by how much. I don't know if this is adjustable on my device, as it's still pretty new to me.

You can't out exercise the western diet. Make smart choices. My wife loves Applebee's Oriental Chicken Salad with the fried option. It's a whopping 1400 calories! Beware of stealthy foods masquerading as healthy.
