you really can eat enough food on 1200 calories. It is a bit of an adjustment because you will have to pick and choose and substitute lower cal healthy foods in but its totally doable. I'm on 1200 calories and had macaroni and cheese for lunch.

is it your ankle that is keeping you bed bound? 1200 calories is a good suggestion as you are living a sedentary lifestyle as of now but if i were you i would google a bmr calculator to get an idea of how many calories you need.

start with smaller goals like 10lbs then 20 then you wont feel so over whelmed by such a massive number and dont forget to celebrate the small victories along the way

I like sherbert its nice and sweet but not as calorie dense as ice cream

try cutting back on the cream and sugar. if anything coffee should help you lose weight because caffeine is an appetite suppressant and coffee is a natural diuretic and laxative.
