I agree with ontheground. I am Gluten free and get really tired of people asking if I do it as a "fad". It really is no ones business why or how you choose your foods.

My breakfast consists of 1/4 cup eg beaters, fresh veggies chopped (usually use 1/3 cup mushrooms, 1/4 cup green onion, 1/3 cup zuchinni, 1 baby bell pepper) what ever you like. I'm going to try and tweek this a bit to lower the calories and fat and see how it tastes. Cause it sure looks delish! Same Mushrooms Same onions Spray butter for the pan and sauteeing veggies Same herbs I'd use unsweetened almond milk I'd use 3/4 cups egg beaters Same swiss cheese I will see how this works

I too have issues with not seeing the progress in the mirror so I have a photo at my desk showing me how far I have come and remember it is not that far to go to get to my goal.
