Gluten free is not a weight loss diet but for those that can not tolerate gluten being able to have pasta or bread makes the life style much easier

Even normal weight patients often don't have reserves to deal with a sustained illness. We are not talking about obese who can't move. All too often even normal weight elderly have mobility issues. But yes staying active is important.

A factor that people working in the medical field has seen is a little extra weight provides the reserves when the older person develops a serious illness such as pneumonia or major infection and is hospitalized. The very thin older person does not have the reserves to sustain them through an illness.

I still occ drink Diet coke and it is not a problem for me. It does not affect my weight loss or cravings so all is good

I love that too, you use a bit less cheese but it is much healthier. I often bake them in single serve containers so I only eat one serving and save the others for other meals or freeze them

If you make your own Paneer, before it is pressed it is similar to ricotta cheese. That would also taste good in your white sauce. Nutmeg is a good idea in white sauce and also with spinach.

I have drank skim milk for about 40 years but I eat full fat cheese and cook with fattier milk too. My mother grew up near her grandparents dairy farm and loved full fat milk but not me. They made skim milk back in the 1920's because the cream was worth more for butter making.

You can do ricotta and spinach filling for them too. I would never substitute cottage cheese for ricotta but I am Italian. My grandmother would climb out of her grave and hit me.
