  • You can try making the meatballs with ground turkey, chicken, or pork in place of the ground beef or in combination with the beef.   • I would be careful eating so much raw spinach on a daily basis. Spinach is very high in iron, especially eaten raw. You can develop iron toxicity when eating a lot of raw spinach.

  • I have found that you can substitute applesauce or baby food prunes for the oil in most baked goods. It adds moisture without the added fat. They don't alter the taste either.
