Well, I would agree that you need to eat more food. Your calories intake is too low and what I see is that you are eating a lot of simple carbs (white bread, croissants) and sugar. My favorite gluten-free lunch is to heat a sprouted corn tortilla in a non-stick pan (dry), then I add warmed pinto beans, and top it with veggies, such as shredded lettuce (or cabbage), carrots, and zuchinni.
