  • Make baked eggplant parmesean. Just slice, coat lightly with breadcrumbs and parmesean cheese. Bake. Dust with cinnamon (trust me) and top with tomato sauce. You could even melt a little mozarella on it (a little). Delish. If you're watching calories, go easy on the olive oil with eggplant...it soaks it up like a sponge.
  • Great! Ready to get back on track. Don't want to wait until January. Hope you'll count me in. Tami
  • This is the best soup ever....but I have some easy ways to "lighten" it up. You can find the complete recipe online. --Use turkey Italian sausage instead of regular --Use reduced sodium chicken broth --Use sliced cauliflower instead of potatoes (or half of each) Let it simmer awhile and I promise, you won't miss the…
  • Fantastic! What an inspiration!

  • Going in the wrong direction. New focus for this week. Easter festivities are over. Visiting family members are back home. Back on plan! Redoing my mini goals to keep myself positive. So I won't focus on the time I've wasted. Starting Weight: 231 Goal Weight: 205 3/17: 229 3/24: 228 3/31: 225 4/7: 225 4/14: 227 4/21: 228…
  • Gave up chocolate for Lent, but I think I've made up for it today. So yes, you could call it a splurge...or a full-on chocolate binge!!!

  • I've heard that too. I'm interested to see if anyone has info on this.
  • I read an article once that said a small bowl of high fiber cereal with milk or a serving of oatmeal was good for night time cravings. I've tried the oatmeal before and it seems to work pretty well :) I don't want anything else after I have it and it's only 150 calories.
  • Most of the info that I've read says that "cheat days" turn into cheat weeks, then cheat months, then cheat years. It depends on your relationship with food. If it's like mine...cheat days are just an excuse to give in to food as an escape. Don't do it. I like the idea of a planned cheat (mentioned earlier). You can squash…
  • Congrats on breaking that 260 mark!!! I know how you feel. For the past month, I feel like I've been working so hard and keeping to my calories. Almost no weight loss for weeks, then all of a sudden the scale started moving again. Halleluiah!!! I guess you just have to plow through those tough spots, as frustrating as they…
  • Sounds like that little "devil on your shoulder" is trying to sabatoge your success. Don't let it happen! No negative self-talk. Yes, you will have to be mindful of your eating and active to maintain, but you can do it.

  • I found you!!! And, I am 5'8" When I gain weight, I'm thankful that I'm tall. But the downside is that I have to lose a substantial amount to notice. Thanks for putting this all together. Tami

  • Healthy Buffalo Chicken Salad: Baked/grilled chicken strips dipped in Frank's Red Hot Black beans Romaine lettuce Baby spinach Chopped celery Chopped onions Chopped cucumbers Marie's Yogurt Dressing-Blue Cheese (2T=70 cal) Yummo!
  • I see you like some oldies. How about? Get Down on It--Kool and the Gang You Dropped a Bomb on Me--Dazz Band Pump It Up--Elvis Costello Fun songs :)
  • I've always wondered about this. I killed myself on a spin bike the other day (sweating like crazy, heart rate through the roof) and the machine said that I had burned half the calories that I did on the eliptical (not even breaking a sweat). I knew that wasn't right, but wasn't sure what to do about it, or how to figure…
  • No mindless snacking this week. Only what I've planned for. If I didn't plan for it...I will NOT eat it. This will be tough. But I would like to see what happens. I like to call these my "What if" goals. Hope everyone has a great week! Tami
  • Oops. Put down the wrong overall goal weight. It should be 180. Tami
  • I'm in! I'm in! I'm also a teacher. We get out of school at the end of May. I tried to enter a challenge a few weeks ago, but lost it. I need something like this to keep me focused. I've been like a hamster on a wheel for the past couple of months. Little progress. I need to commit. Yeah! Thanks! Tami Starting Weight: 231…
  • Too EZ Mac & Cheese.......Yummmmmm.
  • Congrats on your 100 lb goal! Sensational! And no, I do not have a low cal recipe for the tikka masala. However, the tikka masala is a very low cal Indian sauce with tomato as it's base (compared to most of the others that are heavy in butter). I usually use a supermarket sauce in a jar. I can't remember the name of my…
  • Thanks for the ideas. They all sound good. I'm definitely trying the cauliflower/rice trick. I bet it would be good with an Indian Tikka Masala sauce on it. Can you tell I"m hungry at the moment?
  • Love her. But yes, she sometimes uses a lot of processed foods. Try the Too EZ Mac and Cheese. It's to die for--My picky husband's and my nine year old's favorite. They actually ask for me to make it. Wow. I don't know if anyone has mentioned it, but if you don't have the cookbooks, you can find a lot of the recipes on the…
  • I'll be making these this week. Thanks. Are you sure about the amount of cayenne pepper? Just checking.
