Southwest Oklahoma girl here! Lived in Tennessee 20 years and now in Ohio but will always love southern cooking. I'm good 95% of the time but a girls gotta have her fried squash, taters, and okra sometimes or she'll go right crazy :laugh:

I've never taken a bag of frozen veggies out for the sheer purpose of snacking on them but it's not a bad idea! I have eaten a frozen kernal or two of corn that escaped my boiling water on the stove before and it's good but I'm not a fan of frozen green beans at all. Frozen peas sound good tho.

Yep I've made the Stuffed Pepper Soup and it was amazing!! I brought leftovers to work and had 2 people taste and my manager loved it so much I printed the recipe off for her! My family said "this is a keeper" as well. I will be trying other recipes on there soon!

Oh my goodness thank you so much for all the ideas!!! Its not so much that I'm trying to force myself to like it but more need new ways to try it that gives it a different texture. I love oatmeal in cookies, bars etc but am struggling with having oatmeal as a breakfast. I will definitely be trying some of your recipes…

It is because of the health benefits and also because they are filling and it's an extra way to sneak in fiber. Plus I usually will just eat cereal or an egg sandwich for breakfast and so looking for another breakfast food when I get bored of those two. I've not tried the other grains and will look into those.

Fixed this tonight using the Greek yogurt in place of sour cream and added chopped onions, cayenne, chili powder, and garlic powder (just a shake or so of each) and 2% Mexican cheese and it is pretty tasty! Great for these cold winter nights! Can't wait for lunch leftovers and hoping this freezes well too.

Sounds amazing!! I love the Greek yogurt substitute and will try it that way first. I too was wondering about the tomatoes but will either dice some fresh tomatoes or use Ro-Tel to give it a bit more spice. Keep bringing on the yummy healthy (and easy!!) recipes!!!
