Some Morningstar Farms products are vegan, but many (most?) have eggs. Read those ingredient lists! I believe all Gardein products are vegan. I know Target and Whole Foods carry Gardein. They offer a pretty good variety of beef and chicken replacements.

I like brown rice with some canned black beans. I usually spice it up with Green Tabasco, and sometimes add chopped button mushrooms. Not very exotic, but I love the combination! It's also inexpensive, and super-filling.
