Shredded Chicken. I just place about 2 to 3 pounds of boneless skinless chicken breast and thighs in a slow cooker. Cover with Chicken broth and cook on low for 6 to 8 hours. I totally understand just had the same thing happen to me. I think it is because we cut out carbs and sugar and end up replacing it with fat. Such a pain! You are doing great though. That is a fantastic change in your A1C! Great Job!

I cook about a lb of boneless skinless chicken breast in a crock-pot just covered in chicken or vegetable stock with a packet of taco seasoning. Then I just shred it when I get home. Chop up an avocado, 1/2 a red onion, a handful of craisins, and toss with with a 1/4 cup of my favorite salsa. It's fantastic!
