Heron, I am so interested in your LC and ULC results. What glucometer are you using? Did you need a prescription?

Excited to share that I am meeting Chris Kresser tomorrow! He's holding an event locally (mostly about his certification program) but it is very small. Yippee!

Sorry for my absence - I've done a lot of traveling and then prep for my daughter's upcoming wedding. Tried to make sugar-free blueberry jam and learned it doesn't "set" so I have lots of blueberry sauce. I think I can pop that in my vitamix with ice and get sorbet! I'm leaving Friday for 15 days in Spain. I decided to do…

Oh Jen, I just finished day 9, but I know I'll need to re-start again on Sunday or Monday. A dear friend has a birthday and a big promotion to celebrate tomorrow, and I have a banquet to attend on Saturday. I'll be as careful as I can, but will have little control over what is there. At a picnic last night I had chicken.…

Oh, and <3 <3 <3 those kittens. Wish I weren't allergic! (Though, FYI, my allergies are way better since going grain-free nearly two years ago. Very unexpected! Spring is no longer sneeze season)

I've been geeking out on Gretchen, too. For me, going to bed is no issue. It is the too-early wake up that is the problem. I'm always up with the sun. I do not have a clock in my bedroom at all, but wake when I wake every day of the year (with the rare exception of those early morning flights). I'm blessed that I can take…

Day 3 - so 10% of the way to 30! So far, so good. Since I never eat grains anyway, the biggest change for me is no sugar/no dairy. But ghee is allowed, and so is coconut oil. Fat bombs away! Not going crazy with those, though, since I'm still cautious about calories (old habits die hard). Doing well on my macros. Under 12%…

Jen, my Whole 30 reboot started this morning (Tuesday). I'll join you in the jaunting as well. This time on the Whole 30 I'm going to focus on fat and try to keep carbs quite low. I liked the 12 days I did early in May, but sure enjoyed the fruit a bit too much. I'm shooting for at least 60% fat and to try to keep the net…

Good morning everyone! Yesterday was a day of giving as well as receiving. I helped pack 200,000 meals to send to Nepal, which was really gratifying. But then I started working with a local program, BenchmarkProgram.org which has the goal of taking at-risk youth off the streets and into the gym. They have to do their…

I am so proud of you all with the Mudder. Wish I was able to join you!!! Whole 30 day 8, so far so good. I miss dairy (cheese) and peanuts but otherwise it isn't very different than my normal eating. The waistband is definitely a little looser. I've been running regularly. - 18 runs this year so far (about a 5K each, and…

Best wishes for the team! Wish I could be there. I'm on a business trip to Wake Forest U. and am staying in an amazing mansion (tobacco money). I'm so proud that I managed to stay Whole 30 all day yesterday while traveling and today for breakfast. Tough to pass up good southern biscuits and gravy! The headache is gone and…

Thanks TJ. I'm already a bit bored. But then, my food is pretty boring usually since I've been no grain for a few years. Tonight is salmon with snow peas, and then a treat of pineapple for dessert.

Day 2 of Whole 30. Oh, the headache!!! :s Powering through...

Started W30 today! I have a lot of travel and events coming up, but I'll give it a solid try. Even if I just improve on what I've been eating, it is progress. I really back-slid over the last 5 or 6 weeks and can feel the impact. So for breakfast, a banana with almond butter, a veggies-only green smoothie, and 2 ounces of…

Thanks! Every bit of info helps, and I like their podcast.

BTW, for a beautiful dessert you can make a Pavlova. Basically, the "crust" is a meringue with just egg whites and a sweetener (I used pure stevia) - you can add vanilla or another extract if you want to. Then whip heavy cream (again with stevia if you like) for the fluffy filling. Then fresh fruit over top. I made it for…

Hi everyone! I was away at a conference in Denver - did pretty well on Thurs, Fri, and Sunday, but Saturday I went out of control at the break with little chocolate-covered pretzels. I did do lots of walking in the beautiful weather there. I'm mostly back on track but sad to be bundled up in 30 degree weather again. My kid…

Hope everyone enjoyed cabbage with their corned beef last night!

YUM! Love me some artichokes! And garlic butter is the way to eat them for my money! This weekend I finally got to the market - zucchini, radishes, bok choi, broccoli, cabbage, and lots of other goodies made their way home with me. I made fresh tomato soup (with pepperjack - do the little bits of peppers count?).

My daughter is half-way today, and is loving it. Don't know if I'm committed enough, but I'll give it some thought. My biggest issue is a conference coming up next week, over which I have little control...

Gorgeous day, but 3 degrees this morning and 10 inches of snow on the ground. I'm a bit sore from lots of shoveling, but I enjoy doing it so don't really mind. I finally get to walk to the farmer's market today. Yay! I've been diligently writing my paper, and made good progress. First draft to some readers for comment…

Big snow storm yesterday. Baby carrots again... Going to the market today, hoping for some good variety. Kim those zoodles looked wonderful! I'll be making a nice veggie soup later. I know it sounds nuts, but I put in one can of Hormel turkey chili with beans to a big pot of veggie soup and it gives it just the right…

Heron, what the heck did you do with a rutabaga? Mash it?

If it doesn't stop with the ice and snow, I'm never going to have a veggie again. Don't want to walk to the farmers' market or store. :( Too dangerous to carry bags when it is so slippery. Just the standby carrots, onions, and celery...

Even better is a little Boursin, but that is pretty decadent!

John, you are too brave for me. Just remember that everything you want is on the other side of fear. Do as I say, not as I do! :)

My veggie list so far this month as of 3/2: Cauliflower Baby carrots Cucumber Spinach Celery Chia seeds (do seeds count?)

March challenge is 30 veggies in 30 days. Honestly, I think we should do the whole month - 31 different veggies in 31 days! Great idea Carol. Jen, cauliflower is my very favorite veggie. Raw, or cooked! I haven't tried the pizza crust either so am curious. I'm leaning toward using low carb tortillas (there's even ones of…

Thanks Kris and Heron for the idea of roasted legumes! I do like those, and forgot all about them. They're a better substitute than peanuts when I need a nosh! Heron, it takes a special person to foster a dog (or a child!). I can't imagine being able to give him up to a forever home. Thanks for doing that kind of work.…

Kris, Pringles ARE the spawn of the devil! Those cans are just like a sleeve of Ritz. Single serving size. :( For me, salty snacks are the hard problem to solve. Of course, I love nuts but they add up fast. The pork rinds are fine, but still weird me out a bit. I remember seeing Carol with huge boards of pork rind…
