Depends how much fat you want. Sometimes I do a 1tbsp of butter and 1 tbsp of coconut oil. Other times I do 2 tbsp of each.

I just tried Glutino Multiseed English Muffins. Soooo much better than their regular english muffins. I think I even like them better than the Food For Life Multiseed. (I found them too dense and sometimes gummy.)

^^ Not happy about that either. Not impressed with their "Magic Pudding." I can make my own "magic" by just reducing the liquid with the protein powder, let it sit in the fridge a bit and get pudding....for less money/product too and no Carrageenan crap that angers my intestines.

Sounds good! Wish I had a stand mixer. I have a bread machine and made Gluten Free Pantry's Favorite Sandwich Bread and French Bread mixes. Both tasted pretty good when they were still warm. They were terrible in taste and texture after that! Wonder if this would work in a bread machine?

I switched to cider (as of now, Strongbow is in the lead) since I wasn't a fan of any GF beers I've tried. Even the ciders can be too sweet and I can only have a couple. So, I rarely drink now :shrug:

Yes, this. And don't forget travel time. It will take 6-7 hr flight from UK to Boston/NYC vs 10-11 hrs to LA (and that's IF it's a direct flight.) Good news is, it will be a bit shorter going back to the UK though, lol!

Has she tried different brands of coconut water? I've found I don't like Vita-Coco. It has sugar from fruit and I think it tastes "off." I like unsweetened (plain or vanilla) Silk Almond. Silk brand does not have Carrageenan in it. For me, that stuff gives me IBS symptoms, especially if it's in ice cream :-(

I had Anne Burn's, "CAKE MIX DOCTOR," before I had to ditch gluten and loved that book! I was going to try to use the gf cake mixes with the original book, but I'm thrilled she made a gluten free version! I made her GF yellow cake with caramel frosting for my guy's b'day, mmmmmm :love: !!
