I had the same problem just this week! What to do with so much delicious avocado? I just mix it up with diced tomato and onion, a squirt of lime and a little sea salt and garlic powder for guacamole. Yum!

I love hummus! We have to buy the Costco tubs at my house. I don't know just HOW much better they are than potato or tortilla chips, but if you haven't tried 'em, pita chips are pretty stinkin' delicious for dipping, too!

Someone here mentioned something about sparkpeople.com. I checked it out, and definately too many bells and whistles for my taste BUT their food diary has preplanned meals and suggestions for different foods plugged in already to meet your calorie needs, so it might be helpful. I used to have trouble eating all my cals, but I've gotten better at snacking a little more often between meals and spreading out the calories so I don't feel like I'm eating so much at one time. I'm a ranch fiend, and by no means any sort of cook/health food innovator, so I just mix in Uncle Dan's ranch dip mix (0 cals) with fat free sour cream and skim milk. It does the trick for about 10 calories a tablespoon :smile:
