I chop it into big bite size pieces, toss with a little oil, salt and pepper and roast it in the oven like all of my other veggies - so good when it just starts to brown a little, kinda crisp-tender.

Check out Trendweight.com you just plug in your numbers and it shows you your trend line. There are others out there that do the same thing also. Its nice because weight loss is not linear, so even though the scale may go up a little here and there, the trend continues downward, usually.

I eat them almost every day also - probably my #1 go to snack. I really like the whole carrots that you have to peel and chop the best, but I make due with the baby carrots when I have to.

I set mine a little too aggressively too, but that's okay, as long as we are moving in the right direction! Now I know a little better what to set for the next 100 day challenge, lol.
