From what I understand, the only way to build muscle is to eat at a calorie surplus. So, more calories than you burn. That and making sure you're getting most or a lot of those calories in protein.

I disagree that the biggest calorie bomb is the meat. Potatoes on their own are fairly low calorie, but they usually have tons of butter and cream in them. They can get incredibly high calorie.
