I've been that person who adds one egg to a mashed banana, bakes it and calls it a 'muffin' . It.was.not.a.muffin. The same as noodles with kraft is not 'mac and cheese'. Making food into misery is not fun. Just eat decent food in moderation. And dont tell people the cauliflower pizza is as good as real pizza. Lies.

I love salads, Mixed bean and tuna is always good, but most of the time I have brocoli, rocket, cucumber and roasted sweet potato with a protein (salmon, tuna, chicken|). A spoonful or creme fraiche and dijon mustard through is really nice. Anything with avocado in it.

You know how your profile says you never realised you were a fitness junkie....well you wont be for long if you continue with such a low cal diet. If you are seriously struggling with eating 1000 cals a day, I think its time to see a professional.

I third, fourth, fifth or whatever it is the suggestion to see a counsellor. Being able to finally let those feelings go and realise that theyre just holding you back will be REALLY freeing :)

What do you mean by you dont like healthy food? What specifically dont you like? I think its good that you want to set a good example to your granddaughter, living on a diet of chips and chocolate ISNT good for you, though theyre fine in moderation.
