What I had for breakfast this morning: Broccoli (or other veggie) ham & cheese fritatta- cook chopped broccoli, cubed ham, chopped red onion in nonstick pan. add eggs, cook until set then sprinkle with cheddar cheese and serve w salsa. Yum.
