I finally got around to making the risotto today. It was sooo filling! It was a little salty, so I think next time I'll do half broth and half water. I also thought I totally messed it up, but it turned out just fine. I would probably make it again. Oh, and I added shrimp to make it a complete meal! Yummy!

I heart cold press coffee. I usually let mine sit over night - it keeps in the fridge for about 2 weeks. I like to mix mine with chocolate soy or almond milk. YUM!

I'm so behind on recipes! We finally made the fajitas tonight. The only changes we made were to leave out the onion (hubby doesn't like them) and add some zucchini instead. I never have bisquick in the house either. Here's what I use as a substitute: to make 1 cup bisquick 1 cup flour 1 1/2 teaspoons baking powder 1/4 teaspoon salt 1 tablespoon shortening, oil, or melted butter

I drink a small soy latte almost every day that I'm working, so 4-5 times a week. It helps keep me full so I don't snack at work. I would be a lot sadder without it.
