Persian eggplant dip

Two medium eggplants
two cloves of garlic
1/3 cup of greek yoghurt
salt/pepper
1 tsp dried mint flakes

Get rid of the eggplant's skin, salt and put it in a colander so the water from the eggplants drip out. Then pat dry with a paper towel. Fry in about 2 tablespoons of oil over a medium heat making sure not to burn the sides....keep turning them a bit every 5 minutes and if needed add some more oil.

Once they're done, take them out and pat them dry on paper towels....Meanwhile chop up your garlic real fine and fry in a tablespoon of oil in a small pan. Add the mint flakes at the end and remove from the heat when you can smell the mint and it is turning dark colored BUT NOT BLACK.

Mix the garlic mint with the eggplants mashing together really well. Add the salt pepper and the yoghurt....you can process in the processor if you want it really smashed up.

Serve with baked pita bread wedges.

    Sounds yummy. Have you ever tried making this by roasting the eggplant and garlic? That way you wouldn't have the oil calories and fat? I'm sure you would still need a tiny bit even to roast them, I was just thinking that since it all get ground up it might not matter. I will have to give it a try next time I have an eggplant.

    I have a similar recipe that I got from an Iranian friend. Her recipe roasted the eggplant.

    oh yeah u can definitely roast the eggplants or even bake them

    when u bake leave the skin on and when its done just scrape out the insides just make sure u cover with foil to preent drying them

    also u can useany type of yoghurt greek is full fat so its thicker

    you can process it for a smoother result

    its called "kashk e badimjan"
