Lifting question from total newb
I've started using the weight machine in the gym. I'm focusing on my shoulders/arms, as I am trying to improve my posture and have more upper-body strength in general. When I am lifting, should I set it to the weight I can just barely move and do reps until I just can't do them any more? Should I aim for being sore (DOMS)…

Stretching but just more stiff
I started sitting on the floor while at the computer in an effort to stretch hips, hammies, inner thighs, etc. I have not seen much progress in flexibility. Worse, I feel so stiff now I can barely move my legs when I get up from the floor. What gives?! Please tell me this is normal on the way to being majorly flexible...

Why am I stuck at a certain weight? Can't seem to gain past it?
This happened before, I gained up to 98lbs and that was it. Just couldn't break past 100lbs. Then a bunch of stuff happened and I lost a bunch again but now I'm back trying to gain, eating 2200 or so cal per day, got to 98 and am stuck. Do I have to keep upping my calories as I gain?

Scale woes - what is a good brand that is reliable?
The bathroom scale I currently have drives me nuts. When I first step on it, it gives me a number. If I wait for it to clear and weigh again, it gives me a SIGNIFICANTLY lower number. Usually. Need some suggestions and input. I make a smoothie every morning that consists of one scoop protein powder, water, a cup of protein shake (b0lthouse farms), and 1/3 cup heavy cream.
