I've tried a couple of recipes for homemade Balsamic Vinaigrette and haven't been too impressed with my outcome. Does anybody out there have an easy recipe that I could give a try?

So Discouraged :(
I've been at it for 7 wks now, eating really clean with NO CHEATING. I've been working out, too. I've lost 18 lbs, but for the last week I haven't lost a lb. I know that we can hit plateaus. Chile Relleno Casserole
Spray pan with olive oil. Stuff canned Anaheim (Pablano) peppers with jack cheese. Mix eggs with spices, pour over, add grated cheese and bake till firm. Add tomatoes and avocado on top and serve! Good for food prep. Cuts up nice, add to containers to eat during the week. Easy breakfast before work.

Chicken, onions and peppers!
I tried something new tonight. I browned chicken chunks in olive oil, then cooked peppers, onions and garlic...added it all together with a little broth and herbs from my yard. It was very good. I was craving dessert, my bad habit. I tried something that I read and had a cup of coffee with cream. I'm satisfied!
