Black bean corn salad

How's it going?
Is weekday veggie easy for you? Harder than you thought? Is any one meal kicking your *kitten*? Check in here. For me, as long as I have some kind of soup/stew to fall back on it's pretty easy. I do find myself chowing down on ham on the weekends. And bacon. And hamburger. I can't say that I really miss chicken.
