Quick Chilled Pea Soup
Partially cook some frozen peas and chill. Combine with homemade broth in the blender. If the peas are hot from recent cooking, use some frozen broth or add ice cubes to cool everything down. Season and/or garnish as desired. Broth may be chicken, ham, beef, or veggie. Boxed or canned broth may also be used but the taste…

Google whats in the veggie bin for supper ideas
It seems for every pair of veggies, there's a recipe out there waiting for you. I like to just google what's in the fridge and make what I find for supper. Tonight, it's a sweet potato and a big zucchini patiently sitting in the fridge. Googled "sweet potato zucchini" and up popped "Healthy Sweet Potato Zucchini Latkes."…

New Regime in Town: 3 oz. per not 4!
The recommended serving for most red meats is 3 oz. cooked. There are two of us. In the past, I carefully packed meat in 8 oz. packages for the freezer, be it raw bulk sausage or cooked pulled pork. This week, everything is going in 6 oz. bags. I don't think we'll notice the difference when the meat gets incorporated in…

Health Counselor says I can use my pre-scoliosis height
Just kind of joking I asked my assigned nurse from the insurance wellness program what height I should use for calculations given that I'm 3 inches shorter now. She said I could use the pre-scoliosis height. I don't know that I'm going to do that now but when I get closer to goal I might recalculate based on the taller…

How to avoid boring healthy food.
Often folks complain that "healthy" food is boring food. There is no reason for low calorie, well-made food to be tasteless or boring. Most herbs, spices, and other flavorings add little or nothing to your calorie counts and a little goes a long way. A clove of garlic packs a lot of flavor into 4 calories. I've put more on…

Dental NSV
Good news at the dentist's today. My once every three months plaque removal session was much easier than usual. Almost three months of good eating and reduced snacking has resulted in about 1/2 as much plaque as usual. Hip, hip, hooray! And "Who knew?"

Red Cabbage, Beets & Cranberries Slaw
New Recipe: Summer is a great time for salads. This recipe takes three healthy winter foods and turns them into a delicious summer slaw. A little planning ahead helps to make this recipe. Fresh cranberries are in the stores for a short period during the Winter holidays and roasting and chilling beets takes a few hours, but…

How to win the race against cucumber collapse
Cucumbers are notorious for going bad before you get a chance to eat them, especially if you are cooking for one or two people. Four people can easily demolish 1 large cuke cut into sticks. But a single person? Not so much. And there’s nothing more disheartening than finding what’s left of a cucumber sitting in a puddle of…

Savory Yum: Yogurt and Olives
This falls in the category of "Who knew?" or "Don't knock it if you haven't tried it." Greek yogurt with olives stirred in is very filling and yummy. We buy the Roland Oil-Cured olives online 5 pounds at a time so always have them on hand.

For me. it's an NSV "milestone"
I walked a mile today, as measured by the car's odometer. This is the first time I've walked this far in ages! I am back on track. Thank you MFPers!

Crutches for long walks to prevent tilting into pavement
I've taken up walking with crutches for my exercise walks because they keep me more upright. I pace with them on opposite sides (e.g. right foot forward=left crutch forward) and have them set with one longer than the other for my high side. I find this keeps me walking upright and reduces pain and numbness that I often get…

Cellulite in my wattle
With the first 9-ish pounds, my lovely, smooth, plump, double chin is getting saggy and looks like it has cellulite. I know I keep saying that when I lose the weight my 6-decade-old skin will look like a sharpei or a melted candle but, REALLY! Cellulite in my wattle? How rude!

How to Hide a Whole Bag of Spinach in a Couple Sandwiches
Just put a recipe for some cool tuna/spinach warm sandwiches here: http://heidicookssupper.com/blog/2013/04/18/how-to-hide-a-whole-bag-of-spinach-in-a-couple-sandwiches/ We had them last night. Yummy, creamy, good way to "hide" the green and leafy veg in something tasty.

Olive Oil Pump
I decided to measure how much olive oil I use when I use the aerosol pump bottle to grease a pan for a fried egg. It's less than 1/2 a teaspoon. Much less than when I pour the olive oil directly into the pan with the same effect. I've had the same plastic olive oil pump I bought at a Pampered Chef show for years. For the…

A beginner's BMI NSV
For the first time in a long time, my BMI is below 50. It's a small victory but it's all mine!

Want to enjoy retirement but too heavy
I've always been fat. There. I said it. I weighed 205 when I graduated from high school and now, in my early sixties, my weight has been hovering between 275 and 295 for years. I know that eating right and exercising are the way to lose weight. I've done it before but not in many years. It's time now to do something once…
