We had them last night. Yummy, creamy, good way to "hide" the green and leafy veg in something tasty.

    when i have a lot of spinach (or other green) that i want to use up i either chop it and dump it into a soup (sometimes something brothy and sometimes something creamy and blended with potatoes) or i blend them with fresh herbs, cheese, and nuts into a nice flavorful pesto. i use the pesto as a pasta sauce or i toss it with some sort of cooked protein. really yummy. :)
