I made me a couple "Mexican pizzas," while the rest of the fan had pizza hut. I know they're not really Mexican pizzas, but I don't know what else to call them. Low carb tortillas with a few tablespoons of salsa spread around (like pizza sauce), then some low fat mozzarella sprinkled over it, and some turkey pepperoni. Its SOOOO yummy! And only about 175 calories per "pizza." And 2 is plenty to fill me up! Its GREAT when you really want some pizza but not the calories from pizza hut, or the instant weight gain from eating bread!

Great idea! I also hate to waste food and can build a meal around the strangest or random ingredients. I will be copying you as I also have leftover tortilla chips. Lol

Tonight I made mini pot pies in cupcake tins. It's pretty easy to make you use frozen veggies, cream of mushroom, and some form of cooked chicken. I used meatless cause I'm a vegetarian. You bake them in cupcake tins put biscuit dough in and full them to the top.0

We had chicken pesto again, we like it alot! (4oz chicken breast, 1Tbsp pesto, 2 slices tomato, 1/8c mozz cheese, 1tsp of parm cheese bake 350 for 45min.) With green beans and corn. All for 355 calories.0

Tonight we had slow cooker quinoa burritos. They were delicious, now I have heartburn though.0
