    Howdy y'all. It's satisfying soggy Saturday! Happy Saint Patrick's day and Happy Saint Gertrude's day!

    Saint Gertrude is the patron saint of cats and those who love them.

    54 out there now with an expected high of 73 and 20% chance of rain. Well, either it has already rained or we had a VERY HEAVY DEW. The cars look rather wet from what I can see through the windows.

    Corned beef hash (canned) for breakfast with eggs on top. I do have little cabbages (ok Brussels sprouts) for later and some more corned beef (canned, but not hash) as well. I looked at the corned beef rounds and briskets at the store and they just seemed way too pricey this year, and would also be more food than I really wanted. They do come out nicely in the slow cooker but I'm taking the lazy way out, hence the canned meat. I can actually make a rather nice dish with crumbled, canned (or home cooked) corned beef, potatoes (or turnips or rutabagas), cabbage (or Brussels sprouts) and then just go nuts with any additional vegetables if you like, such as onions, carrots, broccoli, cauliflower, etc.

    I'll probably make it with just the big three, corned beef, potatoes, and Brussels sprouts, to have an uncomplicated but tasty dish. I also have some sauerkraut in the fridge if I want to add some actual cabbage.

    J can have leftover Thai basil fried rice from last night's delivery. There's plenty of that.

    I'll probably make some of my tasty Saint Patrick's day food...unless...G comes today. Yesterday J was saying that G might be coming today and if she does they'll want to eat at Dee Thai, because she always wants to eat there. And then we'll have even more leftover Thai food in the fridge, but that wouldn't really be a problem.

    I've already had some corned beef, for breakfast and I can manage, I'm sure, to steam a few little cabbages later for a snack or something so I'll have had both on Saint Patrick's day.

    Frankly, I'll be a bit surprised if she comes, as he often tells me on Friday that she might come on Saturday but then she doesn't. She only seems to comes, lately anyway, when I've got something else that I'd really rather do, and then end up not being able to do it...which actually raises the chance that she will come today. LOL. Of course J has no clue of my plans for St. Patrick's day dinner as he pays little to no attention to holiday food traditions, though he does understand about the BIG TWO. Thanksgiving and Christmas.

    I did sample the Brussels sprouts yesterday at lunchtime, steaming a dozen to go with some baked chicken and a bit of stuffing/dressing. They were delicious. Still plenty left to have today and probably tomorrow and the next day! And I haven't even opened the one pound bag of sauerkraut yet, but you may be sure I'm not eating a whole pound of that at one sitting.

    Need to clear the sink and feed the cats.

    A little after the fact but I was so busy at the show that I never uploaded these pictures of the initial snack and beverage layout, for Thursday setup of the orchid show. I never took pictures at all of any of the later things, like the judges' breakfast, judges' lunch, vendors' lunch and volunteers' lunch, because I was so busy I just never thought of it! But they looked nice too...

    And...here's today's Saint Patrick's Day lunch! J and G went on to an orchid place and when they get back we'll probably all go to the Farmers' Market. And then probably for Thai dinner, despite J having plenty of leftover fried rice already in the fridge. But that's OK, as it won't go to waste. I can guarantee that he'll eat it up.

    And I have leftovers for another really nice plate of my lunch, probably tomorrow. I cooked some chunks of yellow potato in the microwave for five minutes to get them mostly done, then dumped a one pound bag of sauerkraut on top of that, followed by a big pile of shredded corned beef. Then I finished it all with twelve Brussels sprouts, covered it loosely with plastic wrap, and cooked it for five more minutes in the microwave. It came out nice and hot, and just needed a little salt and pepper added at the table.

    Corned beef and cabbage (sauerkraut) AND Brussels sprouts (little cabbages!) and potatoes. Happy Saint Patrick's Day!

    I'm back from walking again and no cents. The temperature this morning was 29 degrees. Yesterday I weighed the change that has been building up in my pockets and came up with 647g AKA 1.42639 pounds. Then I removed much of the change to lighten the load on the pockets.

    Yesterday we had Boiled Red Potatoes, Boiled Cabbage and Boiled Corned Beef for Dinner.

    FWIW Friday my brother and I went to look at the new Whole Foods Grocery Store, It looked open with the store being full of people and the parking lot being pretty full. However upon checking the cars and people were what they called associates there for training and the store does not open until March 21. Oops.

    THAI PEANUT SAUCE

    This Thai Peanut sauce is quick and easy to make at home and the flavor will blow you away.

    Total Cost $1.75 recipe / $0.22 serving
    Prep Time 15 minutes
    Total Time 15 minutes

    (1/4 cup ea.)

    INGREDIENTS

    3/4 cup natural style peanut butter $0.82
    1/4 cup coconut milk, optional $0.16
    juice from 1/2 a lime $0.17
    1 inch fresh ginger, peeled, grated (optional) $0.24
    1 clove garlic, minced $0.06
    1 tsp sriracha sauce, rooster hot sauce $0.05
    1 Tbsp soy sauce $0.03
    1/2 tsp sesame oil, optional $0.02
    1 Tbsp brown sugar $0.03
    1/4 bunch cilantro $0.17
    1/4 - 1/2 cup water $0.00

    INSTRUCTIONS

    Make sure your natural style peanut butter is thoroughly mixed before measuring (you don’t want to get all oil or all solids). In a blender or food processor combine all of the ingredients except the sriracha sauce. Begin with only 1/4 cup of water and add more until you get the consistency you want (I used 1/2 cup total). Add the sriracha sauce a little at a time (blending between) until it is to your desired heat (I used about 1/2 tsp).

    Enjoy the peanut sauce on salads, pasta or as a dipping sauce!


    NOTE: If you do not have sriracha sauce, you can use red pepper flakes. Again, begin with a small amount and add more until it is as hot as you’d like. Remember, when using dried spices, the sauce will get spicier as it refrigerates and the flakes rehydrate.

    I think of Brussels Sprouts as little Cabbages too, We Should have used them instead of the Cabbage since even the smallest cabbage was pretty large and we both like Sprouts and do have a lot of leftover cabbage which I shall likely use as vegetables today.

    I'm a little surprised that the Corned Beef was expensive. The last two weeks the ShopRite had Coupons in their circular for Corned Beef at $1.88 a pound so after finding a extra set of coupons and using his Key tag and mine we ended up with 4 Corned Beef in the Refrigerator out of which two are for the Basement Freezer and the third will become a Pastrami and the Fourth was used for the Holiday Meal.

    Strangely enough I do not think I have ever had Thai Basil Fried Rice. It does sound delicious, I think leftover Thai sounds like it will be delicious.

    I meant to pick up some Rye Bread, Swiss Cheese and Sauerkraut to make sandwiches using the Thousand Island Dressing. OTOH not having picked them up I can save the calories from those sandwiches :wink:

    I plan to watch this one first, I suspect that one of the secrets will be that the Butter topping for the Popcorn is poured out of a can. I remember going to the movies and watching the sticks of butter melting in the dispenser and the popcorn being popped.

    Eating well here, all vegan too! Did not have any corned beef...oh well, I don't really miss it so no problem.

    Yesterday I had a little piece of the Boiled Red Potatoes, Boiled Cabbage and Boiled Corned Beef for Dinner. I have one more meal setup to be heated for today and some other proteins for use with Lunch.

    The scale was nicely lower than yesterday morning, again, It seems that the "Time-restricted eating" combined with a 100% NS plan is working really well so far.
