    Thanks! It was super yummy. I did cheat on the sauce a little - I used a kit for that, but it was pretty simple. Scrambled egg, zucchini noodles, Thai sauce and some peanuts. I would have probably put chicken in there, too, but we were all out and I was too lazy to run to the store.

    I love cooking Thai. That is one thing I miss is some fresh rice noodles in my Khee Mao.

    I bought a $10 spiralizer on Amazon.com. Then you just cut the ends off of the zucchini and twist it through. Incredibly simple, and the consistency can be as crisp or as "mushy" as you'd like depending on how long you cook it. You can use it for pretty much any vegetable. The good thing about zucchini is that it tends to absorb the flavor of whatever you're cooking it with.

    I plan to try the spiralizer with a sweet potato sometime this week, too.

    This was really good. An egg cooked inside an avocado with some salsa. I scooped out some of the avocado before adding the egg and cooked them in the microwave using a ziplock steamer bag. Took me all of 45 seconds!

    Avocados, roasted garlic, a splash of almond milk, Parmesan cheese and basil..... I think. There is a recipe on Pinterest. I didn't follow it to a "t". But it was still really really good!!

    Aww man, I totally made something picture worthy and forgot.
    Flame grilled Boca burger.
    Baybel gouda, sliced into 4 thin circles.
    Classico pizza sauce and some red pepper flakes on top.

    So good, easy, quick, and 21 g of protein.

    I tried the avocado/egg thing, too. It didn't turn out as pretty, but it sure was yummy. I'm not a runny egg fan so I did mine scrambled instead of sunny side up.
