    I have a recipe I was looking to make for a white cake that uses coconut flour. I will have to find where I saved it. Being low carb, most of my stuff now IS sugar-free, low carb, and generally higher fat. I will share a couple of the recipes I like here.

    Chocolate ganache - equal parts chocolate (can use unsweetened, then add Sweet Leaf stevia or preferred sweetener to taste. A splash of vanilla helps sometimes too) and heavy cream. Microwave for 30 seconds, stir, then 15 second intervals until bubbles come up in the cream. Stir until blended. Eat with a spoon!


    Mug Chocolate Cake - no link, but someone's tried and true recipe. I have made this and I go back and forth as to how I like it.

    Here's mine, adapted from my nutella mugcake. The secret? I use dark block chocolate (which has real sugar) and no sweetener.

    1 serving dark chocolate, size is based on brand and content. (70% to 85% is 9-11 carbs worth, depending)
    1.5 Tbs coconut or other oil of choice. Unsalted butter can be used, but salted is too salty.

    Microwave in mug until chocolate is melted.

    Add 2 tsp cocoa powder, 1 Tbsp HWC, and .5 tsp vanilla extract and mix until smooth.

    Add 1/4c almond flour and stir to combine, then beat in 1 egg. I use medium eggs, but I suspect any size will work.

    Microwave on high one minute, then in 20 second bursts for up to a minute more, until the center is set. Too long and it will dry out.

    Serves two. I can't even imagine eating one of these by myself. Very dense and moist. We often serve with more HWC poured over.

    OMG! I'm craving scotch eggs!!! Not had one for YEARS because they're high fat and I was told no fat, just carbs! I'd forgotten them! I'm sooo buying sausage meat and making some! Dammit! Won't be able to until Monday! Don't think I can cancel my exam and I'm sure Steve wouldn't be happy if I cancelled our night out to watch Madness play live just so I can make scotch eggs! lol!

    This is my problem. I've been brought up with fat being evil so all the fatty recipes I've thrown away and forgotten. I need to rebuild my recipes.

    I'm so trying the coconut cake recipe too! Better clear next week, I'll be in the kitchen all week! lol!

    You're welcome. Those either were personally recommended or I've made them...

    I have dozens and dozens more recipes saved in my email. If in doubt, google "Keto" before your favorite recipe, and there will be a dozen variations. Keto is ketogenic diet based, which is low carb, low/no sugar, and high in fat, usually moderate in protein, so that is right up a diabetic's alley!

    So you could google Keto Chicken Parmesan, Keto Chocolate Chip Cookies, or Keto Philly Cheesesteak, or whatever... There are options for just about anything out there.

    Fat is fuel, protein is building blocks, and for anyone wired like me, carbs are poison. I don't count veggies when I say "carbs" in this regard, because veggies like broccoli, asparagus, green beans, brussells sprouts, cabbage, mushrooms, and anything you normally put in a stir fry - are golden on my list! Oh, and most greens. But things like corn and peas and most beans are too carby. Tomatoes and avocados and berries (all in moderation) are about the only fruits I can handle, but even berries if I eat too many trigger mad sugar cravings... Breads, desserts, sweets, junk, etc.... My body handles them all the same. :(

    I eat eggs fried in butter, over medium or scrambled, and if scrambled, slathered with cheese as my breakfast most days. I generally eat 4 or more eggs per meal. Now, on the scotch eggs, because of the sausage, I couldn't eat as many. I just used Parmesan, or a parmesan/panko mix, but I have almond, coconut, and flax flour now. Oh, that reminds me, a friend sent me a great recipe for flax crackers, too, that I have tried, but that she makes all the time. Let me know if you want that one! I'm dying to make it with some pate!!

    I've started using coconut oil and I found it's lovely as it adds a nice flavour to foods. Not a coconut flavour strangely!! I did two lots of fried potatoes for Steve and Teri the other week. One lot in vegetable oil the other in coconut oil and even Steve who's a fussy git said the coconut ones tasted much better!

    I'll look into the Keto recipes. I'm a bit stuck, I'm trying to be realistic, it's going to take me years to loose this weight. I don't want to spend the rest of my life weighing food and watching what I eat. I'm trying to find a way to change everything so what I'm eating just becomes a way of life. If that makes sense!!! I'm being good and weighing my food etc. Mainly because I'm trying to see where I'm going wrong so I can get to my goal of eating right.

    This group covers the basics of low carbing. Lots of folks with diabetes in there, lots with autoimmune, PCOS, all kinds of stuff. I think this group would give you a ton of info and advice, too.

    This is the more strict, lower carb group. Lot of overlap from the other group, but some great info there, too.

    And I love sharing what I've learned. It reinforces it for me. If you do low carb properly, and just monitor your carbs, mostly, you might be able to knock off the weighing, measuring, and stuff. I go back and forth.

    The info docs and the lot are taught is very out of date...

    I started at 319 in 2010. I'm in the 240-250 range now. I hope to get down to below 200 - maybe 175 or so within the next year or more... Going low carb has given me my quality of life back!
