    This is the best chicken I've ever had.

    Rinse about 4 chicken breasts or 10 boneless, skinless tenders.
    Take one packet of Italian dressing seasoning and mix it with 2 tablespoons of brown sugar.
    Dip each piece of chicken in the mixture.
    Lay on a foiled lined baking sheet and bake for 45 minutes at 375.00
    Super easy and the mixtures cooks to a delicious caramelized coating.

    I poach some skinless chicken breast tenders in chicken broth, then shred and save leftover broth for soup. To the chicken I add green onions, sliced celery, chopped walnuts, low sugar craisins, salt/pepper, flax seeds, and nonfat greek yogurt to make a healthy chicken salad.

    We made this Buffalo Chicken salad the other night for dinner. We used iceberg since that is what we had leftover from some wraps, but any lettuce would work fine. We toss it in some homemade bleu cheese salad dressing made with greek yogurt, and topped it with 4 oz of chicken tossed in Frank's hot sauce. auqd1vs3ay9z.jpg

    I make this recipe http://www.food.com/recipe/chicken-tikka-masala-25587, but leave out the heavy cream and instead use light coconut milk which shaves the calories drastically. I also leave out the jalepeno because I'm a huge wimp, and it's already incredibly spicy. It may not be quick, but it makes 4 servings and freezes really well.

    oooohhh myyyyy, so happy someone did chicken.. I LOVE CHICKEN, my favorite dish is chicken casserole, or pot pie http://allrecipes.com/recipe/26317/chicken-pot-pie-ix/ you can find all the top recipes here <<<<<<. but other then that i like to marinate in fat free Italian <3 dressing and grill :)

    Taco soup. It's very filling. It's usually topped with crushed tortilla chips and sour cream, but it's pretty low cal per serving if you skip that.
    Cilantro adds nice flavor. You can Google a recipe, just substitute extra beans or corn and cut back on meat to lower your kcal count. :)

    I like to sauté some red onions and green/yellow/orange/red peppers. I add some salt, pepper, spicy pepper and red cayenne pepper. After, I add in chicken that has been chopped into little cubes. I then like to add some brown rice, black beans, corn, shredded cheese and homemade guacamole. Just like a chipotle bowl, but healthier! :)

    I also love bruschetta chicken:
    -Make bruschetta (tomato, onion, garlic, basil, olive oil, s&p)
    - Cook chicken breast
    - Top chicken with bruschetta and cheese (mozza or parm or a combo)
    - Bake or broil until cheese is melted
    - Drizzle with balsamic or balsamic reduction if you please

    Easy Chicken Cacciatori
    dredge chicken in a bit of flour and lightly brown it in a skillet with a bit of oil. Remove the chicken and drain half the fat. Into the fat, place sliced onion, then sliced bell pepper, then a couple cloves of garlic, saute till aromatic. Add in chopped mushrooms and continue to cook a little more. When warmed up, add spices of your choice, and a small can of diced tomatoes. Bring to a bubble, nestle the chicken back in. Cover and bake in a preheated oven at 350 degrees F. for about 30 minutes. Incover, raise the heat to to 375 and continue to bake another 15 minutes. Remove, taste for seasoning and adjust as desired.

    Serve as a stand alone or with your favorite starch/starch substitute ... I like cornmeal mush, sometimes use a some rice noodles or spaghetti squash. You can use any type of chicken from breasts to parts of a whole chicken.

    I usually cook it with the skin on but remove the skin before eating. Love it with chicken leg parts.

    I love to take boneless skinless chicken breast and put a couple tbsp of salsa and 1 slice of provolone, heat it up and bam...yummy stuff! I usually do around a 5 oz portion.
