Happy March!

Wow how did we get here so fast? Well we made it through the chocolate and wine and fancy dinners of February just to be faced with the beer and whisky madness called March. Good luck dear lushes.

    Too many vodka and somethings each night. Seriously need to explode out of this rut I am in. I have great plans and ambitions on my way into work each morning but by the time I get home those plans and ambitions melt away and I fall into the very deep rut I have created.

    Syd sorry about your leaks. But you have to admit So Cal needed all that rain.

    Not all at once!!! So much damage. The good news is no rain in the forecast for a while so we can dry out.

    Tues - I improvised to make hurricanes. I subbed tequilla for white rum, squeezed fresh juice from Clementines, and use beet juice to make it red. They were good! I had 2.
    I got ciders this afternoon and it's nice here so I'll likely have a couple.

    Robin, I hear you! This week (so far) has been my best in so long! I can talk myself into it when my feet hit the floor in the morning, but by the time hubby comes home and we've finished our daily walk, I want to crack open that bottle and just sink into the couch... Last week, made it through with just one night.. this week, two zero nights so far.. but keep reading.. Don't think I'm going to make it!

    Tuesday = 0

    Going to our mountain cabin tonight and we have a hot tub, and mountain views. Having a hard time convincing myself I don't deserve just one glass of red while soaking in those bubbles!

    Wed - tequila with La Croix and splash of pineapple juice (yummy), 1/2 bottle of rose' and another cocktail to finish up = 4

    I have to do something. I haven't lost any weight this year despite my slightly above average efforts. Yesterday I weighed and was up THREE POUNDS! I weighed again thinking it was some salty food and muscle soreness/water retention and the scale was the same this morning. I have actually been logging this week for the first time in about a year and think I need to keep that up and maybe take my booze consumption down. If I can't limit the weekend numbers, I need some 0's during the week.....

    That's me Ashley....I can't seem to control the weekends so logging 0's during the week, makes me feel better about it. Some weeks are easier than others.

    Thurs - 3 glasses of red. The wine store was having a 20% off cases sale. I went for a bottle and came home with a case plus 6 mini bottles of vodka. They were 50 cents!

    Eric is running a 5k tomorrow so we're staying in, going to bed early, and drinking very little.

    Congrats on the raise, Kate!
    Feeling a little better, actually might try to at least get in a walk or some yoga.
    Roofers coming tomorrow. We'll see what they have to say about repairs. I'm sure there will be wine.

    Thursday-out to celebrate. 2 beers and 3 Manhattans......dragging a bit but not to bad!
    Tonight, we are planning a sunset walk. Up early tomorrow and we are taking the bus out to the West side, looking for a gift, walking 4 miles into Lahaina town, and mini pub crawl....hence the bus, there is always a reward :wink:

    This week was a mixed bag. Annual physical, moderation in alcohol but not with the carbs! Does cutting back on one make on more likely to increase the other? I dunno. Have a great weekend follow lushes!

    Hey lushes. We had a fun and busy weekend. I feel like I drank a good chunk of it, but moderated OK considering I was drinking most hours I was awake! Friday night I had 3 glasses of wine and a cider. Saturday we went to a flea market/festival and had a drink there. I had 2 ciders and sat out side and read at home after; weather was great. Had a Miller Lite at a garden show and finished the night with a few glasses of white at dinner and home. Yesterday Eric and I split a batch of mimosas while doing yard work. They did not have booze at Sesame Street Live, but then I had 2 drinks at dinner and 1/2 bottle of wine at home. I do think I'll shoot for at least one 0 tonight, maybe another tomorrow.

    Happy Monday. I did accomplish some things this weekend so I will mark it in the good column. Yesterday I bought a black box merlot and proceeded to drink entirely too much of it. It is so easy to sip all day long. *sigh. I have everything paid for for the Disney world trip so I feel good about that. May 7th cannot get here fast enough.

    Roofers showed up and supposedly fixed leak. Now I need to schedule painters, which I was going to do anyway but had no plans to paint the ceiling :/
    I booked a birthday getaway in April and firmed up our annual trip to Laguna Beach with the family over Memorial day so it's nice to have something to look forward to. If I could just shake off this virus I'd be motivated to exercise and get in shape. It just hangs on and on....

    My stomach was bothering my all day yesterday and I pretty much felt like *kitten* from about 3:30 till I went to sleep. I took the morning off from work and still only feel about 80%. I've got a 2:00 meeting across town and am going back home after. Good news is I am almost caught up on Mozart in the Jungle by watching half of season 3 this morning. The funk made for an easy 0 last night anyways, and another tonight.

    Good morning.. so this week the 0 alcohol is not working so well. Oh well, not going to let it bug me too much. Going for a 3 mile walk today and hope that will counteract the BAD week.

    I have a fun idea, you may have done before... I love new recipes, esp those that are low in calories and don't taste like cardboard -- Anyone want to do recipe swap with me? maybe we can post our favorites?

    So going for a zero tonight to at least get one night in. :)

    Here's my first recipe share. I love anything that I can make in my cast iron because it's so easy.

    Skillet Lemon Chicken with Olives and Herbs (351 calories)
    INGREDIENTS:

    1/2 tbsp extra virgin olive oil
    4 (8 oz) boneless chicken breasts
    1/2 tsp kosher salt
    2 teaspoons all purpose or gluten free flour
    2 cloves garlic, crushed
    1/2 cup dry white wine
    1/4 cup lemon juice
    1 teaspoon lemon zest
    1 teaspoon chopped fresh thyme
    1 cup pitted chopped olives
    1 tbsp chopped fresh parsley
    optional, 4 thin lemon slices

    DIRECTIONS:

    Preheat oven to 400F with the rack in the center position.
    Heat the oil in a 10 inch cast iron skillet over medium-high heat. Season chicken with salt and pepper then sprinkle with flour. When oil is hot, sear chicken about 3 minutes on each side.
    Add garlic, wine, lemon zest, lemon juice, thyme and olives. Top with lemon slices if desired, transfer the pan to the oven and bake about 10 minutes, until 165F in the center.
    Serve hot topped with parsley.

    I served this with a green salad and homemade honey mustard dressing. If anyone tries it, I'd love to hear your feedback.

    So I made up for it yesterday.... I had 3 glasses of wine and 4?? ciders. It was over the course of about 8 hours so it wasn't terrible. Still a little sleepy this morning. I was going to get up and workout and that did not happen.
    I'll probably have a couple tonight. I put a bottle of white in the fridge around 10:00 last night and ended up opening a bottle of red instead. It's supposed to be in the 70s so we'll probably grill out.

    These are pretty yummy:

    COCONUT CURRY CHICKEN MEATBALLS
    PREP TIME: 5 MINUTES COOK TIME: 40 MINUTES TOTAL TIME: 50 MINUTES
    INGREDIENTS:

    MEATBALLS

    1/2 cup roughly chopped carrots
    1/4 red onion, chopped
    2 tbsps freeze dried cilantro
    Juice of 1 lime
    2 tbsps basil
    1 tbsp coconut aminos (or soy sauce if not Whole30)
    1 tsp ground ginger
    1 clove garlic
    1/2 tsp ground cumin
    1/4 tsp red chili flakes
    1/4 tsp each sea salt and pepper
    1 lb ground chicken

    SAUCE

    1 can coconut milk
    1 tbsp red curry paste
    1 tbsp almond butter
    2 tbsp lime juice
    1 tsp minced garlic

    DIRECTIONS:

    Pre-Heat Oven to 400F
    MEATBALLS

    Place all the ingredients (but the chicken) into a high-powered blender or food processor and pulse until chopped.
    Add the chicken and mix well.
    Roll into 1 1/2 - 2" balls and place them on a lined or greased pan.
    Bake for 20 minutes, roll the meatballs and bake them for an additional 20.
    SAUCE

    In a large skillet, over medium heat, heat the coconut milk.
    Add the rest of the ingredients and simmer for 10 minutes, stirring constantly.

    PUTTING IT TOGETHER

    Add the meatballs to the sauce, stir them around and simmer for 2-3 minutes.
    Serve over cauliflower rice.

    *I MADE THE MEATBALLS AHEAD OF TIME AND WARMED THEM UP IN THE SAUCE SO IT WAS QUICK TOO. I WOULD PROBABLY COOK THEM 5 MINUTES LESS NEXT TIME. I ALSO DIDN'T REROLL MY MEATBALLS AFTER 20 MINUTES. AND I SERVED WITH ZOODLES SAUTEED IN A LITTLE COCO OIL, TOUCH OF SESAME OIL, AND SALT AND PEPPER.*

    Hi everyone, I just joined your group. I love my liquor and struggle to find the balance between beverages and calorie burn. Cooking is a big passion for me! I made up this concoction for Tuesday's dinner. It was delish if I say so myself. I served it over zoodles which I didn't include in the cal info below. I also add my cooking oil amounts used separately in my log because I usually tweak that to fit my macros left for the day when I get around to making dinner. I just copy/pasted from my recipe builder here so sorry if some of the food descriptions look a bit weird. I am very careful to double check nutritional values used with other websites so I'm confident in the cal/macro values for one serving.

    Shrimp Pad Thai
    serves 8
    115 cals/serving - 4g fat - 16g carb - 3g fiber - 5g protein

    • 1.50 cup chopped, Carrots, raw
    • 3 stalk, Onions, young green, tops only
    • 7 oz, Fresh Snow Peas
    • 4 cup, Mung Bean Sprouts
    • 1 pepper, large (3-3/4" long, 3" dia), Peppers, sweet, yellow, raw
    • 2 clove, Garlic, raw
    • 1 tbsp(s), Ginger root - Raw
    • 6 tbsp, Sauce, fish, ready-to-serve
    • 6 tbsp, Sauce, hoisin, ready-to-serve
    • 1 lime yields, Lime juice - Raw
    • 0.50 cup, Peanuts - Unsalted

    Directions:

    Saute shrimp in oil of your choice - I used about a tablespoon of sesame oil. Remove from pan when just turned pink on both sides. Dump in everything else, chopped to sizes of your preference, except for a third of the green onion and all of the peanuts. These will be used for garnish. Once veggies are cooked to your liking, chuck the shrimp back in there to heat all the way through and mix in the peanuts. Serve over zoodles or rice vermicelli and garnish with reserved green onions, a few fresh bean sprouts and a sprig of fresh Thai basil. Toss some red pepper flakes if you like the heat - I do! Here's mine:

    Oh there's also about an eighth of a cup of fresh chopped cilantro in there too. Forgot to add that in the recipe but cals are negligible.

    Spent the day at the beach yesterday. Spring has finally arrived to SoCal...we've got sun with 70s and 80s for the next week. I'm a happy girl!!
    Had white wine with my g/f at lunch then another 2 glasses at home. Probably more wine tonight but I'll get some exercise in.

    We grill year round and I will marinate several things to have for the week. A garlic lemon marinade for chicken and fish that i can change up by adding soy sauce, ginger or teriyaki depending on what we're in the mood for. I've got a good mexican marinade for skirt or flank steak that has chile powder, Cumin, garlic, lime. Lots of chicken sausages (so many great flavors out there...I love the garlic/artichoke) I know these aren't specific recipes but just some ideas for you all.

    It has been cold and rainy and today the wind is really blowing. cranberry and vodka has been flowing freely this week. I am so glad it is Friday.

    Thurs - I had two small glasses of wine and decided to have ice cream instead of another one.

    Got up this morning and got my workout in. We don't have any plans for tonight so likely we'll at least finish the two open bottles of wine.
