    Definitely in-house delivery! Sounds pretty tasty.

    We went out with friends. This restaurant has a lighter menu so I had a 6oz steak and two small veggie sides for under 400 calories.

    That is a pretty nice calorie count, Yooly. I'm not a meat eater so have no idea how many calories a steak represents.

    I'm back! Well, I got home Saturday before noon, but I have been pretty much worthless the last couple of days. I need a vacation from my vacation! We were up early most days to get to the parks early. I also ate horribly in that I had very few meals and we mostly snacked our way around Disney. Did have a couple of good meals including an amazing dinner at Jiko. I had the filet with roasted veggies and mac and cheese, then I added some Peri Peri shrimp. Seriously one of the best steaks I have ever had in my 40 years. There was a LOT of walking. I honestly think I may have lost weight while there!

    I am hoping to really get serious with my food intake and health starting next week. This week I am just trying to survive getting back into work and letting my body rest some. The chronic fatigue has hit so it is a bit of a struggle. I did clean out and organize my pantry yesterday. Hope to do the freezer after Christmas once the 10lb turkey is out of it. That takes up a ton of space. I do hope to have a few containers of turkey dinner that I can freeze once I make the dang thing.

    That is actually part of the plan haha.

    So I am making a full turkey dinner for Christmas since I won't be traveling to see my family due to lack of PTO and only one day of holiday pay. Turkey, stuffing, mashed potato casserole, green bean casserole, gravy, and maybe another veggie. Not only will I eat that for like a week, but I am also going to get containers and make up full dinners to freeze. May make some substitutions like just some plain green beans instead of the casserole, but otherwise just portion everything out into a meal.

    I am also going to be doing this for soups/stews/chilis once I have room.

    I have some from the store and they have been really helpful. But that gets expensive. Since it is so easy to just make a little extra food when you are cooking for 1 I may as well do it on my own.

    That is the type of freezer meal I meant. The kind that you make and freeze yourself. :)

    My freezer always has a stock of chili/soup/curry/pastasauce/??? that I can pull out in a pinch. Sometimes I don't want to pull it out, but it is there.

    I baked a loaf of bread yesterday and it came out the best yet! It's the 3rd loaf I've made thus far in my attempt to master yeast dough. And this time, I kept a small ball of the finished dough out to use as a starter for fermented yeast ... I think it's called sourdough starter ... but it's not started the way I tried once before. This is more how my mom described how her mother and grandmother kept their yeast going from one bake to another. ... It won't be ready to be used until it has had time to grow and develop and there will probably be some failures along the way. In the meantime ... I'm going to work on the recipe that seems to be working for me.

    Am so looking forward to making bread pudding with apples and walnuts in it after that loaf of bread goes stale. ... And just maybe I'll attempt to bake a new loaf to take to the family get-together on Christmas Eve day for lunch. Such happiness! ... having something to look forward to and plan for.

    And yes the bags are full of cookies too! Several small boxes are tucked in the freezer for surprise guests and hubby.

  • Cookies are what I'll be working on next week. A plate goes with me to my family on the 24th, the remains of the plate go to his family on the 25th, and my son wants a plates-worth packed so he can take it down to my aunt's on the 26th. No problem. That'll get them out of my house.

    I made that bread pudding ... and it was 'ok'. Actually, it was quite good ... but I think the memory of one was better than the real thing. I'm glad I did it ... won't have that urge again for a long long while.
    ... But now my urge is to make chicken something and have cornbread with it. Can't decide exactly what chicken dish would call for cornbread ... but there's a whole free range chicken in the fridge so I'd better dream up something.

    White Chicken Chili. While I make on that isn't exactly on the super healthy and low cal side (though I can fit it in my calories and have in the past), I know I have seen ones that are "better" when it comes to that. Just depends on what your goals are. But I love the stuff. Going to make some (and some cornbread) after the big holiday meal.

    Thanks @Athijade ... I've never made chicken chili. I'm not certain I would know how to proceed with a whole chicken for that dish, as I've always used ground meats for the chili's I've made in the past. ... Somehow I think that something with chicken and cornbread would have to be made from left over chicken. ... One time I made a chicken pot pie using cornbread on top instead of a pie crust. Another time I used chicken, peas and carrots as you would for Shepard's Pie but used cornbread mix instead of mashed potatoes for the cap. I'm not too worried about the calories in a particular recipe because it all comes down to portion size for the calories I can allow for the meal. Some only allow a small portion and others allow a lot!

    I would consider taking the one time time hit to sit and debone and extract all the lean meat from the chicken carcass in one go.

    I tend to separate white from non white and possibly suck out the wings etc that are harder to clean while doing so... especially when I bring home a rotisserie chicken... then I either toss the carcass or possibly throw it into boiling water to render into stock. Frankly stock making works but I suspect uses more electricity $s than it would cost to buy the stock ready made in the first place! :lol:

    Anyway. If you then dice the pieces of meat I think they almost qualify as equivalent (albeit chunkier) to ground/minced meat for use in chili or casseroles or soup or...

    If you have a large enough pot, you can boil a whole raw chicken (or parts bone-in). Toss in chopped onion, carrots, celery, salt and pepper. This creates a chicken stock and cooks chicken all at the same time. Measure and save broth for freezer.
    After the chicken cools, you can skin and debone. Weigh the meat into separate freezer baggies ready to go.
    Cheaper than rotisserie, canned stock and less salt too.

    So I just got a surprise gift from one of the divisions I work with... a huge box of chocolates. And I tried a piece each of the milk chocolate and dark chocolate. It is good chocolate. So no cookies for me, but I have all the chocolate I could ever want.
