gardein veggie burgers on the panini press...wow, they turned out great...I put them on a bed of leafy greens, chopped onion and tomato and Primal Kitchen no sugar ketchup. Then in a little lock and lock...all cut up. Just tasted it at work. So good. Tastes like it was cooked on bbq. Wow.

I had a bit of a cheat night last night. My brother came over to help me with a couple projects and then I served up some munchies and wine.
Plan for this week... usual oats for breakfasts, McDougall soups for lunches, and big ol' salads with beans and a nut based dressing for dinners. I need to order some more McDougall soups.

Left work early for a dentist appointment and decided not to bring any work home! I am home and doing laundry, going to make a good dinner and read/relax. It has been a rough few weeks at work and I am ready for some down time.
I stopped at the store and they had lovely fresh sugar snap peas. Going to make some whole wheat pasta, throw the peas and some edamame in with the pasta for the last few minutes of cooking, then toss with a lemon tahini sauce and sprinkle with toasted sesame seeds, grated carrot and fresh ground pepper. Sounds so good... I should get cooking!

Hmm, my last post here did not post. I have been having some technical issues, and so has MFP. Or maybe it was user error! Anyway, sorry to be so quiet.
@magic71755 - Looks like another yummy day! So glad you and Lulu are still enjoying the pool!
Oh, and Key Lime La Croix -- I need to watch for that! I love Key Lime.
@Mihani - I write short fiction. I am thinking I will try a novel during November (National Novel Writing Month), just for the fun of it. No idea what it will be about. Maybe I'll start a list of ideas. Hmmm....
Cooking note: I have been making something like "ratatouille on pasta" for the 14 year old. It is quick (15 minutes?) and ETL friendly. Finely chop half a red onion, and start cooking it in a skillet. Dice a medium zucchini and add. Cook until zucchini has started to be tender. While onions and zucchini are cooking, stir dried rosemary, oregano, basil, parsley and pepper to taste (I like a lot of all of these). Add a 14 oz can of diced tomatoes or fire roasted diced tomatoes. Serve over a small helping of GF penne pasta, or other pasta of your choice. Variations: add some diced eggplant just after adding the zucchini; add some fresh spinach; add a handful of frozen corn at end and stir in.
Having a good ETL day so far:

Very cool, Austin! One of my uncles is a published author, he always wrote but got serious about it after he retired, and his latest novel is under consideration for a movie!!! How cool would that be? I want to go to the premiere if it happens, but I'm guessing his more immediate family (which is large) will get first dibs on invitations. Boo!!! LOL
I had a bunch of short stories and some random chapters of a novel going 15 years ago or so, and hadn't backed up my HD and it crashed, and I lost it all, years and years of work. I kind of lost my mojo at that point and haven't written anything since. On the up side, I am religious about backing up these days.
The pasta turned out sooooo yummy. I think next time I will add some kale or baby spinach as well, to up the greens. I forgot the toasted sesame seeds but it didn't need it. Took some in and ate it cold for lunch. Also eating some almond milk yogurt, oatmeal, etc. I have to be careful of my teeth until the permanent crown goes on so I'm trying to avoid anything too crunchy.
Magic, you keep reminding me I have to try pho soon. I haven't seen the key lime la croix so I'll keep my eye out. I drink loads of la croix. It makes me miss wine and beer less haha! Hope you and Lulu had a great day.
Off to take the boy to the vet. I feel like things are getting better at work. Still a lot to catch up on, but I definitely see improvement. I hope in another couple months that I will get my life back for real. I want to get back into cooking more often, and gardening, and keeping up on my housework, maybe take some classes just for fun like drawing or photography. I just want to rediscover the me outside work. I kind of lost myself over the past 10 years or so.

I am taking Saturday out of the office to do housework and lots of prep. My salad prepping friend outdid herself again. She gives me so much stuff I usually can't even use it all up. It costs me about $35 a week which includes groceries and she does the shopping. I am very lucky to have such a great friend! So salads are already done. Planning a big batch of baked tofu, a bean based soup with lots of veggies and greens, maybe ratatouille (Austin got me thinking about that), and a batch of balsamic roasted 'shrooms, probably hummus to top my salads or a nut based dressing. We'll see. But that should get me through most of next week.

Last family day was yesterday...so sad to say goodbye to my beautiful niece and her DH and baby...but they will be back for Thanksgiving. The baby will be five months ...and that means so much growth in so many ways...I loved seeing them so much during these past two weeks.

The Boy wanted Ratatouille Pasta for dinner again. Yippee! Super happy I have found a veggie-heavy dish that works for him, that he is excited about!
And my ETL day was a good one:
B- cauliflower, spinach & blueberry smoothie with lemon juice, cinnamon, ginger and turmeric; side of goji berries and almond butter; coffee
L- big dish of steamed turnip greens; dish of steamed mushrooms and garbanzo beans; dish of steamed zucchini, raw red onion, diced grape tomatoes and spices; steamed acorn squash and apple (yum!)
S- apple slices & almond butter
D- big salad with kale, romaine, red pepper, lots of roma tomato, roasted beets; dish of steamed zucchini, raw red onion, nooch and spices; steamed acorn, butternut and apples
So I am currently all about spices. A couple of favorites: smoked paprika and Aleppo pepper. Anyone else love either of these?0 -
Mornin' all... it is very early in the morning here. I only worked a few hours yesterday because I had a miserable sinus headache and allergies flaring up. So I've been sleeping a lot since yesterday afternoon and not sure if I can sleep any more.
I brought a bunch of work home so that and prep and laundry will be my priorities today. May not get to much other housework. I have settled on what I'm going to make today I think. Baked Japanese sweet potatoes, baked baby potatoes, roasted mushrooms, baked tofu, stir-fry eggplant and savoy cabbage, white bean and collard greens stew, spicy sauteed kale, un-honey mustard dressing. Also going to put together more containers of oatmeal for the freezer. That worked out so well just grabbing a container and adding hot water at the office. I use 1 cup oatmeal, 1/2 cup berries, 1/8 tsp each turmeric, pepper, cinnamon, a tablespoon of chia seeds, a couple walnut halves, a few slices of banana, and some finely chopped greens. This gives me loads of energy for my work day. Now that I'm thinking about it I'll roast the baby potatoes and throw them in the stew.
Magic, I really like the Dave's bread but I prefer Ezekiel. So glad you got to spend time with family and enjoyed yourself.
Austin, haven't tried Aleppo pepper, but I use smoked paprika a lot especially with sauteed greens. I use vegan liquid smoke in soups and stews quite often for that smoky flavor.

🍁 It’s the Autumn Equinox this weekend! I’m new to this thread- love all the nutrition lovers here. Looking forward to the healthy mindset and inspiration. I find that I really have to look for food inspiration on MFP- weird but true.
I’m not 100 percent vegetarian, but I am plant based. I’m focused on nutrition and getting in as much vitamins & minerals as I can. I do believe in the old quote - Let medicine by the food and that we either feed disease or fight it when we eat.
I’m always looking for new nutrient dense recipes.

Hi Safari Gal... welcome to the group! We all here kind of follow our own path, but are mostly ETL compliant. I stick to mostly ETL compliant, but not 6 week plan strict most of the time because I love my starches. LOL1

I got most of my prepping done today. I skipped the spicy sauteed kale and steamed broccoli because quite honestly I'm still not feeling great and I am just tired of cooking and prepping. I will get those done tomorrow or Monday. Going to take a nap and try to get some work done this evening. I have to go to the office tomorrow for a few hours at least. Main thing is, I see a seriously good ETL week coming up!

The stir-fried (in veggie broth) Japanese eggplant and savoy cabbage was thrown together on a whim and turned out very nice. I seasoned it with ginger, garlic and black pepper. I think next time I'd add a splash of soy sauce at the end as well.
The white bean and collard greens stew turned out very tasty also. I sauteed onion and garlic, added 2 bunches worth of collards and 2 cans of beans and sauteed for a few minutes, then added a can of diced tomatoes, a couple cups of veggie broth, cumin, smoked paprika, no salt seasoning, and sauteed until the collards were tender.
This is how I usually cook... I just throw things together. I've been eating this way for so long I have a feel for what works.
I kind of forgot how much I enjoy Japanese sweet potatoes. I just baked them then sliced and have been eating the slices like cookies. LOL The skin is more tender than regular sweet potatoes.
I'm heading to the office today then home to do more work here, but since I was out most of Friday I want to see how much of a disaster my desk is before Monday morning.

vegan prepared salad from Sprouts over one head, chopped romaine lettuce with rice vinegar dressing
zoodles with sauteed mushrooms & onions and marinara with crispy, air fried tofu (I think this was my second attempt...so good...I need to find a good dipping sauce...I ate it separately. I used low sodium Tamari and oat milk then dredge in GF panko...oh my goodness. YUM! Crispy outside, tender middle...just not enough flavor...but very promising)

It’s crazy how the same product can have such different effects on the body, based on its processing. Beyond just focusing on whole rather than refined grains, the wholiest of all is intact grains. Instant oats are better than powdered oats; rolled oats are better than instant; steel-cut oats better than rolled; and intact oat groats are the best!0 -
Great menus gals! I've still never tried oat groats. I should, because I love grains of all types.
I'm having a rough week, but hanging in there with eating right! So easy when I have everything prepped. I found the white bean and collard greens stew especially nice, and have been eating a lot of that.

Hello ladies...my weekend has turned into couch potato me. Just in a funk. Did not prepare for my worker for tomorrow, so he is not coming. I am hoping there will be magical dust sprinkled on me, tonight while I sleep...and will wake up refreshed and ready to conquer the day. I know the motivation comes from doing...don't wait for some special moment ... but I feel so overwhelmed...ay ya ya!
